Fresh ingredients6 tender stem broccoli1 red pepper6 mushrooms½ red onionHandful of spinach
Pantry staples50g sweetcorn
Flavourings2 tbsp tamari2 tsp maple syrup1 tbsp almond spread40 ml almond water

Cooking method

The tender stem broccoli can be cut into small chunks, whilst the red pepper, mushrooms and red onion can all be diced.
Add the broccoli to the frying pan first, and after approximately five minutes, add the red pepper, mushrooms, red onion and sweetcorn. Add the tamari to the frying pan and lightly coat the vegetables.
Once the vegetables are nearly cooked, add the maple syrup and almond butter and gently mix through. Once everything is cooked, add the almond water and gently warm through. Top with finely cut spinach and serve.
Cooking notesGuide amounts are included, however you can include slightly more or less based on your own personal preference. You could also include some baby corn, spring onions, snap peas, bean sprouts, frozen peas and sesame seeds - just ensure there's plenty of sauce to cover everything.Tender stem broccoli certainly works better than normal broccoli.
